Meet Justin Lewis 

Chef Justin Lewis brings decades of culinary leadership across Los Angeles and California’s Central Coast, with past roles at Firestone Walker, the Malibu Inn, and Nomada Hotel Group. Known for his seasonal, ingredient-driven, sustainably minded approach, Chef Justin crafts elevated, seasonal tasting menus at San Simeon that celebrate the region’s agricultural richness. Beyond the kitchen, he and his fiancée are first-generation farmers developing a regenerative vineyard and raising Navajo-Churro sheep, a rare heritage breed.
